Abstract

The study was conducted on a total of 77 adult bulls: 45 Ankole (AK), 14 Ankole X Friesian (AF) and 18 Karamojong (KJ) cattle breeds. Meat samples (Small Intestines (SI), Longissimus dorsi (LD), Psoas major (PM) and Semitendinosus (ST)) were collected from three abattoirs located in Mbarara, Mbale and Kampala during dry and wet seasons.
